<p>A new chapter roared into life at the start of this year as <a href="https://www.palehall.co.uk/luke-selby" target="_blank" rel="noreferrer noopener">Luke Selby</a> took the wheel of the food and beverage department at Palé Hall, <a href="https://www.thebryntirion.co.uk/" target="_blank" rel="noreferrer noopener">The Bryntirion Inn</a> included. Just a short jaunt from the main house, the 300-year-old pub has had a gentle polish (Luke&#8217;s handiwork, naturally), but still brims with rustic charm  –think roaring log fires, timeworn stone walls, chunky exposed beams and a playful nod to owner Tony Barney’s love of classic cars and motorsport.</p>



<p>The menu hones in on comforting pub classics, reimagined with Luke Selby&#8217;s signature pizzazz, championing the bounty of the North Wales larder. And to whet your appetite, we’re sharing one of Luke’s standout recipes – a goat&#8217;s cheese tart to die for. Forks at the ready, here&#8217;s your delicious glimpse into the kitchen.</p>

<h3 class="wp-block-heading" id="h-for-the-cooked-beetroot">For the cooked beetroot</h3>



<ul>
<li>A mix of red, candy or golden beetroot</li>



<li>Balsamic vinegar</li>



<li>Olive oil</li>



<li>Salt and black pepper</li>
</ul>



<h3 class="wp-block-heading" id="h-for-the-pickled-beetroot">For the pickled beetroot</h3>



<ul>
<li>Thinly sliced beetroot, type of your choice</li>



<li>100ml white wine vinegar&nbsp;</li>



<li>100ml water</li>



<li>50g sugar</li>



<li>Pinch of salt</li>
</ul>



<h3 class="wp-block-heading" id="h-for-the-beetroot-crisps">For the beetroot crisps</h3>



<ul>
<li>Very thinly sliced mixed beetroot</li>



<li>Neutral oil for frying</li>
</ul>



<h3 class="wp-block-heading" id="h-for-the-goat-s-cheese-filling">For the goat&#8217;s cheese filling</h3>



<ul>
<li>1 log Pant‑Ys‑Gawn goat&#8217;s cheese</li>



<li>1 tbsp honey</li>



<li>1 tsp grated lemon zest</li>



<li>1 small garlic clove, finely grated</li>



<li>Freshly cracked black pepper</li>
</ul>



<h3 class="wp-block-heading" id="h-for-the-tart-shell">For the tart shell</h3>



<ul>
<li>1 sheet high‑quality puff pastry</li>



<li>1 egg (for egg wash)</li>
</ul>



<h3 class="wp-block-heading" id="h-to-finish">To finish</h3>



<ul>
<li>A mix of fresh garden herbs and flowers</li>
</ul>

<h2 class="wp-block-heading" id="h-method">Method</h2>



<h3 class="wp-block-heading" id="h-prepare-the-main-beetroot">Prepare the main beetroot</h3>



<ol start="1">
<li>Peel the golden, candy, and ruby beetroots.</li>



<li>Simmer in seasoned water till tender, then remove and allow to cool.</li>



<li>Portion into wedges and dress with the olive oil, vinegar, and seasoning.</li>



<li>Set aside.</li>
</ol>



<h3 class="wp-block-heading" id="h-make-the-pickled-beetroot">Make the pickled beetroot</h3>



<ol start="1">
<li>Bring the vinegar, water, sugar and salt to the boil.</li>



<li>Pour over thinly sliced raw beetroot.</li>



<li>Leave to pickle for at least 30 minutes (or longer for a deeper flavour).</li>
</ol>



<h3 class="wp-block-heading" id="h-make-the-beetroot-crisps">Make the beetroot crisps</h3>



<ol start="1">
<li>Heat oil to approxiamtely 150–160°C.</li>



<li>Fry very thin beetroot slices until crisp, but not browned.</li>



<li>Drain on paper and season lightly with salt.</li>
</ol>



<h3 class="wp-block-heading" id="h-prepare-the-goat-s-cheese-mixture">Prepare the goat&#8217;s cheese mixture</h3>



<ol start="1">
<li>In a bowl, mix the Pant‑Ys‑Gawn with honey, lemon zest, garlic, and black pepper.</li>



<li>Taste and adjust seasoning as needed. It should be creamy, tangy, and slightly sweet.</li>
</ol>



<h3 class="wp-block-heading" id="h-bake-the-puff-pastry-tart-shell">Bake the puff pastry tart shell</h3>



<ol start="1">
<li>Cut the puff pastry into tart shapes or rings.</li>



<li>Dock the base with a fork.</li>



<li>Brush lightly with egg wash.</li>



<li>Bake at&nbsp;180°C&nbsp;until risen, golden and crisp.</li>



<li>Allow to cool slightly, then gently press the centre down to create a well for filling.</li>
</ol>



<h3 class="wp-block-heading" id="h-assemble-the-tart">Assemble the tart</h3>



<ol start="1">
<li>Spread a generous layer of the goat’s cheese mixture into the base of each tart.</li>



<li>Arrange the seasoned beetroot pieces on top.</li>



<li>Add pickled beetroot for acidity and colour.</li>



<li>Finish with beetroot crisps for texture and finally garnish with a salad of the garden herbs.</li>
</ol>
